A Morning at the Distillery
It’s a perfect morning to visit the distillery, where the magic of crafting agave spirit truly comes to life. As we walk in, we’re greeted by Nic, the owner, who’s excited to share their love for this artisanal craft. There’s a warm, inviting atmosphere, and you can instantly feel the passion that drives them.
The distillery isn’t just a production facility; it’s a space filled with creativity and innovation. There’s a cozy restaurant and bar area where guests can enjoy a taste of the spirits produced right on-site. The walls are adorned with labels showcasing their diverse offerings.

Getting to Know the Distillery
As we begin our tour, we learn that this place has been brewing up delicious spirits since November 2019. But the journey didn’t start there. The founder has been in the beverage industry for over 20 years, from brewing beer in college to making wine in Napa Valley.

After moving to California, they decided to shift gears and focus on distilling. The transition wasn’t without its challenges, especially opening just before a global pandemic. Yet, they persevered, earning accolades for their craft. It’s inspiring to see how passion and resilience can lead to success, even in tough times.
Introduction to Pacific Coast Distillery
In the heart of California, his distillery is dedicated to creating high-quality, small-batch spirits that reflect the region’s unique terroir. They pride themselves on their craft, producing everything from agave spirit to award-winning bourbons and single malts.
With a production capacity of around 100 to 150 barrels a year, the distillery keeps things intimate. This allows them to maintain the highest standards and ensure each bottle is a true representation of their artistry. The team here is not just about making spirits; they’re about crafting experiences.

Craft Distillation Process
So, how does the magic happen? The distillation process is a fascinating blend of science and artistry. The team begins with high-quality ingredients, including grains and, of course, agave nectar. They use a pot still for their whiskies, which allows for a richer flavor profile. This method bypasses the columns typically used in larger-scale production, giving their spirits a unique character.

In the back, a steam jacketed cooker is used to mash the grains. This is where the transformation begins. The grains are cooked, mashed, and then fermented. The fermentation process can take about a week to a week and a half, depending on the desired flavor profile.

Water plays a crucial role in the distillation process. At Pacific Coast Distillery, they’ve implemented a closed-loop system to reuse processed water. This not only conserves resources but also ensures that the water used in production is of the highest quality. After all, great spirits start with great water.

This nectar is then fermented and distilled to create their agave spirit.

The nectar they bring in is around 80 bricks, which is then broken down to about 20 bricks for fermentation. This process ensures that the sugars are properly fermented, resulting in a clean and flavorful spirit. It’s a labor of love that requires careful attention to detail at every step.

For example, to call a spirit “tequila,” it must meet specific criteria, including being produced in designated regions of Mexico. Since they’re crafting their spirits in California, they have to be creative with their branding and labeling; anything made outside of Mexico is called Agave Spirit.
Unlike tequila and Mezcal, which offer more flexibility, agave spirit has strict regulations. It must be pure agave with no additives if made in California.
